SPAGHETTI WITH TOMATO SAUCE



Ingredients:

  • Spaghetti - 500gm (long)
  • Onion - 1 (Large chopped)
  • Garlic - 4 flakes (chopped)
  • Fresh Tomatoes - 1 1/2 kg (chopped)
  • Fresh Lemon Juice - 5 tsp
  • Freshly grounded Black Pepper to taste
  • Sugar - 1 tsp
  • Olive oil - 5 tsp
  • Fresh Basil leaves for garnish
  • Fresh Parmesan Cheese  - 20gm (cut into pieces) (optional)
  • Salt to taste

Method:

In large sauce pan pour 5 liters so water add pasta, 1tsp of salt and place over a high heat.

Warm 20ml of olive oil in a sauce pan over moderate heat, add the onion cook until tender. Add garlic and cook for 5 minutes.

Reduce the heat add tomatoes cook until they have collapsed and sauce has thickened (15 to 20 minutes). Add Sugar ,salt and pepper and keep warm. 

Meanwhile ,When the water reaches a rolling boil, drop in the pasta. Bring back to the boil until pasta cook  tender but not soft right through. Check it.

Drain the pasta but leave some water clinging to it, and return it to hot pans with the 4 tsp of olive oil . Toss the pasta to coat it with oil.

Add the sauce and lemon juice to the pasta and toss well. Serve immediately with flakes of parmesan if liked and fresh basil leaves to garnish.
