FRESH TOMATO SOUP
Ingredients:
- Fresh tomatoes - 2 kg
- Butter or Olive oil - 2 tbsp
- Onion - 1 (chopped)
- Salt and fresh ground black pepper to taste
- Pinch of Sugar
- Basil leaves - few (optional)
- Fresh Cream (optional)
Recipe Direction:
- Melt the butter or warm the oil in a large pan over a moderate heat, add the onion, cover and cook until the onion begins to soften five minutes.
- Add the tomatoes to the pan, cover and continue to cook until the tomatoes have collapsed and are puree like 15 to 20 minutes.
- Pour the soup into a food processor or blender and work to a puree, then pass it through a sieve into a clean pan (to serve warm) or into a bowl(to serve chilled), adding a little water to thin it to the desired consistency if necessary.
- Season with salt and black pepper to taste, and stir in the sugar.
- Reheat gently, or serve chilled from the refrigerator. If you like, swirl some cream into each bowl and strew a few basil leaves on top.
- This the easiest and most delicious tomato soup.
