MIXED VEGETABLE PAKORA
Ingredients:
- Oil for deep frying
- Besan Flour - 3 cups
- Ajwain seeds - 2 tsp
- Red chilli powder - 2 tsp
- Salt to taste
- Capsicum - 1 (seeded and cut into dice)
- Potato- 1 (Peeled and cut into dice)
- Onion - 1 large (cut into dice)
- Egg plant -1 (unpeeled and cut into dice)
Recipe Direction:
- To make batter : In a large bowl, combine flour, ajwain seeds, chilli powder and salt.
- In a sauce pan, heat oil until it begins to smoke, then quickly stir into flour mixture. Add enough water to form a thick, smooth batter.
- Fill a wok with oil to a depth of 2 to 3 inches . Heat oil over medium -high heat to 180°C on a deep frying thermometer. Meanwhile, add all vegetables to batter and mix well.
- Working in batches of about 8 to 10 pakoras carefully drop one heaping tablespoon of mixture for each pakora into hot oil. Cook turning as necessary, until light golden brown. Repeat with remaining batter.
Note:
Just before serving pakoras, re fry them in batches of 8 to 10 , turning once, until crisp and golden brown 4 to 5 minutes. Drain on paper towels . Serve hot with onion raita.
