STUFFED CAPSICUM
Ingredients:
- Capsicum - 8
- Oil - 2 tbsp
- Salt to taste
For Filling:
- Boiled potatoes - 2 (smash)
- Ginger Garlic paste - 1/2 tsp
- Boiled Peas - 1/4 cup
- Spring onion - 2 tbsp (finely chopped)
- Cummin seed powder - 1/4 tsp
- Pepper powder - 1/4 tsp
- Chilli sauce - 1 tsp
- Tomato sauce - 1 tbsp
- Lime juice - 1/4 tsp
- Cottage cheese - 100 gm
- Coriander leaves - 1 tbsp (finely chopped)
- For Topping:
- Melted butter
- Bread crumbs
For Garnish:
- Fresh cream (optional)
Method:
Wash and dry capsicums and slice off the stem ends of the capsicums and stand upright, scoop out seeds and membrane.
In a pan add 2 tsp of oil and mix all the filling ingredients together and cook for 5 to 10 minutes in a low flame. Stirring in between and then stuff the capsicums with the mixture.
Place in shallow dish. Top them with buttered bread crumbs, sprinkle cottage cheese and microwave for 10 minutes.
Garnish with fresh cream or onion rings. Serve hot.
